I’ve always enjoyed taking a minimalist approach to cooking. I consider a recipe a success if I use less ingredients with fantastic flavour pairings. That’s how I came up with this simple white bean summer salad.
Speaking of minimalism, it just so happens I love a minimalist morning. You probably know that making lunches ahead of time is a great way to save time and stress in the morning. However, constantly making lunch the night before can get repetitive. Whenever I make a big dish to last two or three days, the next morning I can feel the lead weight lift off my shoulders and fly, fly away.
You’ll love the fresh taste of this summer salad with fresh basil and cilantro. Don’t like cilantro? Add more basil. Simple.
It’s extremely filling from all the protein and fibre in the white beans, so it’s a great salad on it’s own. But I would imagine it would also pair quite nicely with some grilled fish or chicken for a fresh summer meal.
It’s a five minute recipe– which is all the time I have most evenings and I know many of you are the same. Give yourself a break. It’s summer. Toss together this fresh, white bean salad.
- 13 Cocktail Tomatoes (15 oz)
- 1 and ½ cups white navy beans, cooked
- ½ cup fresh cilantro, chopped roughly
- ¼ cup fresh basil, chopped roughly
- 2 TB lemon juice
- 1-2 TB extra virgin olive oil, to taste
- Halve or quarter the cocktail tomatoes. Add all ingredients to a large bowl and stir. Serve immediately, or refrigerate to allow the flavours to blend.
